Toast Skagen

Ingredients

For the Skagen

  • 100g M&S Food Classic Mayonnaise
  • 100g M&S Food Lighter Crème Fraîche
  • Juice and zest of half an unwaxed lemon
  • 5-10 sprigs of fresh dill (or chive)
  • 1 large (or 2 small) spring onions, finely sliced
  • Salt and freshly ground pepper
  • 2 packs M&S Food Atlantic Peeled Prawns (175g each)
  • Burren Balsamics Citrus Pearl Bursts (optional)

For the Toast

  • A little salted butter, for frying
  • M&S Authentic Brioche Loaf
  • 1 heaped tbsp M&S Collection Dill & Mustard Sauce

Directions

  1. Make the dressing: Combine the mayonnaise and crème fraîche with the dill and mustard sauce, lemon juice, and zest.
    1. Stir through the sliced spring onions and the prawns.
    2. Season with salt and pepper to taste, then set aside.
  2. Toast the brioche: Melt two tsp of salted butter in a large pan over medium heat.
    1. Fry the slices of brioche for two minutes per side until lightly golden and slightly crisped.
    2. Remove each slice to a tray lined with kitchen paper to cool slightly. (Alternatively, toast each slice lightly in a toaster).
  3. Assemble: Cut each slice of brioche diagonally to make two triangles.
    1. Spoon 1-2 tbsp of the prawn mixture on top of each.
    2. If using the citrus pearl bursts, add a 1/2 tsp of these on top of the prawn mixture.
  4. Finish with some fresh dill (or chive).
