Scallion Prawns 油爆虾

Ingredients

  • 1 lb prawns
  • 30 g rice wine
  • 3 g salt
  • 10 g rock sugar
  • Minced ginger
  • Green onion
  • scallions

Directions

  1. Fried ginger and green onions and scallions with the oil (0.5: 1.5: 1.5 ratio)
  2. When green onions turn yellow, the oil is ready for prawns
  3. Remove the ginger, onion and scallions, leave the oil in the pan. Add the prawns and then fry
  4. When the prawn is almost well cooked, add ginger and rice wine, a bowl of water, salt and rock sugar, turn the fire to small, add the lid and let it cook for 15 mins.
  5. Then bring to a boil and strain to make the soup clean. Stir it quickly until the juice becomes condensed. Now it’s ready to serve.
