Ingredients
- 50g white sugar
- 50g brown sugar
- 24g butter
- 2 medium eggs
- 2tsp freshly brewed coffee
- 200g sourdough starter
- 100g rhubarb, diced
- 100g whole wheat four
- 100g white flour
- 1tsp baking soda
- 1/2 tsp cinnamon, ground
- 1/4 tsp nutmeg, ground
Directions
- Preheat oven 180 C degrees.
- combine sugar & butter.
- Add Coffee, egg, sourdough starter, rhubarb, and mix.
- Sift flour, baking soda, cinnamon and nutmeg.
- Fold all Ingredients together
- Fill greased or lined muffin cups 1/2 to 3/4 full
- Bake for about 20 minutes.
- Let cool on wire rack.
