Sourdough Rhubarb Muffins

Rhubarb muffins, made with sourdough.

Ingredients

  • 50g white sugar
  • 50g brown sugar
  • 24g butter
  • 2 medium eggs
  • 2tsp freshly brewed coffee
  • 200g sourdough starter
  • 100g rhubarb, diced
  • 100g whole wheat four
  • 100g white flour
  • 1tsp baking soda
  • 1/2 tsp cinnamon, ground
  • 1/4 tsp nutmeg, ground

Directions

  1. Preheat oven 180 C degrees.
  2. combine sugar & butter.
  3. Add Coffee, egg, sourdough starter, rhubarb, and mix.
  4. Sift flour, baking soda, cinnamon and nutmeg.
  5. Fold all Ingredients together
  6. Fill greased or lined muffin cups 1/2 to 3/4 full
  7. Bake for about 20 minutes.
  8. Let cool on wire rack.
