Mushroom Galettes

Galettes filled with garlicky sautéed mushrooms, cream and melted cheese.

Ingredients

  • 4 galettes bretonnes
  • 80g grated cheese (Cheddar, Emmental, or Gruyère)
  • 400g mushrooms, finely sliced
  • 1-2 cloves of garlic, crushed
  • 100ml double cream
  • Knob of butter
  • Salt and pepper

Directions

  1. Melt the butter in a frying pan and sauté the mushrooms with the garlic until soft
  2. Add the double cream and heat gently
  3. Season with salt and pepper, then draw the pan off the heat and keep warm
  4. Place a galette in the crêpe pan and sprinkle a quarter of the cheese over the centre
  5. When the cheese begins to melt, spread a quarter of the mushroom mixture over the cheese
  6. Fold in the edges to make a square
  7. Serve with salad
