Mesa Red Sauce

Ingredients

  • 1/2 tbsp vegetable oil
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp (60ml) masa harina
  • 2 tbsp (60ml) ancho chile powder
  • 1/2 tsp ground cumin
  • 1/8 tsp cayenne powder
  • 1/2 tsp salt
  • 1/2 tsp cracked pepper
  • 1/2 tbsp oregano, minced
  • 2 cups vegetable stock or water, heated.
  • 1 tbsp tomato paste
  • 1/2 tsp brown sugar

Directions

  1. Heat vegetable oil in a saucepan over medium-high heat. Add onion and saute until translucent. Add garlic and cook for 3 minutes. Sprinkle in the masa harina and stir constantly as it cooks and turns golden.
  1. Add the spices and oregano and stir for another 2 minutes. Slowly which in the warm vegetable stock and bring to a boil. Reduce to a simmer and whisk in tomato paste and sugar.
  1. Simmer partially covered for 30 minutes, stirring regularly. Season to taste.

Serve with beans or rice and your kitchen will now smell amazing.
