- 1/2 tbsp vegetable oil
- 1/2 yellow onion, diced
- 3 garlic cloves, minced
- 2 tbsp (60ml) masa harina
- 2 tbsp (60ml) ancho chile powder
- 1/2 tsp ground cumin
- 1/8 tsp cayenne powder
- 1/2 tsp salt
- 1/2 tsp cracked pepper
- 1/2 tbsp oregano, minced
- 2 cups vegetable stock or water, heated.
- 1 tbsp tomato paste
- 1/2 tsp brown sugar
Directions
- Heat vegetable oil in a saucepan over medium-high heat. Add onion and saute until translucent. Add garlic and cook for 3 minutes. Sprinkle in the masa harina and stir constantly as it cooks and turns golden.
- Add the spices and oregano and stir for another 2 minutes. Slowly which in the warm vegetable stock and bring to a boil. Reduce to a simmer and whisk in tomato paste and sugar.
- Simmer partially covered for 30 minutes, stirring regularly. Season to taste.
Serve with beans or rice and your kitchen will now smell amazing.
