Mango and Cucumber Tarka

Ingredients

  • 1 mango (must be ripe), peeled and diced into 2cm chunks
  • ½ a cucumber, halved lengthways and thinly sliced
  • 1 small red chilli, deseeded and finely diced
  • 1 tbsp vegetable oil
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp mint sauce
  • A drizzle of honey
  • Some freshly chopped coriander
  • 4 tbsp natural yoghurt

Directions

  1. Prep fruit and veg: Combine the prepared mango and cucumber in a bowl with the chilli.

  2. Temper the spices: Heat the vegetable oil in a small pot until it starts to smoke.

    1. Add the coriander and cumin seeds; they should crackle immediately.
  3. Finish and serve: Remove from heat and carefully swirl onto a kitchen towel, then add them to the mango and cucumber.

    1. Add the remaining ingredients (mint sauce, honey, coriander, yoghurt) and mix.
    2. This will keep in the fridge for up to three days.
