Ingredients
- 1 mango (must be ripe), peeled and diced into 2cm chunks
- ½ a cucumber, halved lengthways and thinly sliced
- 1 small red chilli, deseeded and finely diced
- 1 tbsp vegetable oil
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp mint sauce
- A drizzle of honey
- Some freshly chopped coriander
- 4 tbsp natural yoghurt
Directions
Prep fruit and veg: Combine the prepared mango and cucumber in a bowl with the chilli.
Temper the spices: Heat the vegetable oil in a small pot until it starts to smoke.
- Add the coriander and cumin seeds; they should crackle immediately.
Finish and serve: Remove from heat and carefully swirl onto a kitchen towel, then add them to the mango and cucumber.
- Add the remaining ingredients (mint sauce, honey, coriander, yoghurt) and mix.
- This will keep in the fridge for up to three days.
