Black Bean Tacos

Vegetarian Black bean chilli best served in tacos.

Ingredients

  • Tortillas
  • 2 tbsp virgin olive oil
  • 4 cloves of garlic, finely chopped
  • 1 red onion, diced
  • 1 dried chilli
  • 2 tomato
  • 400g tin black beans
  • 1 corncob
  • 1 ripe avocado, stoned, peeled, diced
  • coriander to taste, ruffly chopped
  • 1/2 lime

Directions

  1. Soak the chilli in 100 ml boiling water for 10 minutes.
  2. Heat oil in a saucepan at medium heat, add the garlic and red onion and saute till softened.
  3. Put the chilli and its soaking water in a blender with tomatoes blitz till smooth.
  4. Add black beans to the onion and garlic, with the blended chilli and tomatoes and simmer for 5 minutes.
  5. Grill the sweetcorn for 2 - 3 minutes until tender.
  6. Slice the kernels of the cod.
  7. Build tacos with corn, black beans, and avocado and garnish with coriander and lime.
