Ingredients
- Tortillas
- 2 tbsp virgin olive oil
- 4 cloves of garlic, finely chopped
- 1 red onion, diced
- 1 dried chilli
- 2 tomato
- 400g tin black beans
- 1 corncob
- 1 ripe avocado, stoned, peeled, diced
- coriander to taste, ruffly chopped
- 1/2 lime
Directions
- Soak the chilli in 100 ml boiling water for 10 minutes.
- Heat oil in a saucepan at medium heat, add the garlic and red onion and saute till softened.
- Put the chilli and its soaking water in a blender with tomatoes blitz till smooth.
- Add black beans to the onion and garlic, with the blended chilli and tomatoes and simmer for 5 minutes.
- Grill the sweetcorn for 2 - 3 minutes until tender.
- Slice the kernels of the cod.
- Build tacos with corn, black beans, and avocado and garnish with coriander and lime.
